Healthy & delicious cookie dough bites with chickpeas

You are going to love these - promise! And you'll never guess that the secret healthy ingredient is... chickpeas! We were introduced to these yummy treats by Shirley from sundhud.nu, Try them out, all you need is:

  • 1 can of organic chickpeas, drained
  • 5 TBS mable syrup
  • 5 TBS melted cacao butter or coconut butter
  • 3 TBS cashew butter
  • Pinch of sea salt
  • Pinch of cardemom
  • Grated peel of 1/2 an organic orange
  • 1 tsp vanilla powder
  • 1 tsp almond essence
  • 150g of almonds, soaked, skinned and processed to a fine pulp in a blender or food processer.
  • 5 TBS chopped dark chocolate
  • 5 TBS cacao nibs
  • 5 TBS gojiberries
     

MIX IT ALL UP

  • Add everything to a large bowl except chopped chocolate, cacao nibs and gojiberries.
  • Puree with a stick blender till the dough is completely uniform.
  • Stir in chocolate, nibs and gojiberries and mix well.
  • Place the bowl in the fridge for 30 mins to firm up so you can roll the dough into small bite size balls. Or do what we did, press the dough into cute little silicone moulds and place in the freezer for 30 mins to set.
  • Squeeze out the bites and keep in a tight jar in the fridge for up to 3 days.
  • Or store them in the freezer and take a few out when you feel like a healthy snack.
